Ageing and monitoring

Since it was founded in 1849, our Maison has been located in the same buildings in the centre of Savigny-lès-Beaune. These buildings contain ancient cellars, the oldest part dating back to 1820. This is where the wines are aged for several months in oak barrels, according to Burgundy tradition.

Ageing our wines in French oak barrels allows them establish and distil the notes specific to each climat.

Our red wines are aged on lees until they are bottled by gravity, without filtering. This process takes the bottles naturally and immediately to the Maison’s cool two-hundred-year-old cellars.
