Controlled appellation Our Bourgogne Hautes Côtes de Beaune is harvested on a plot situated in a privileged location in the heart of Maranges, near the village of Santenay. The steep hillside is exposed east / south / east and the vine covers about one hectare.
Local soil Mainly clay and limestone mixed upon old marls.
Wine-making Manuel handy harvested in small boxes. In the winery, a strict selection of each grape is done by hand on a conveyor and a destemming is done. Following, a long fermentation in open wooden vats is done during 18 days before a pneumatic press. Without pumping and by gravity, the future wine is transferred down in the cellars into oak barrels.

Maturation is partly made in oak barrels and in stainless vats.

Character and style His ruby “robe” precedes a nose where appears authentic aromas of ripe red fruits (blackcurrant, cherry) and also wild scents. On the palate, the wine is marked by a great personality, with a tone that blends with time, velvety tannins and a little spicy finish. The palate reveals its terroir with a wild animal and originality back.
Ageing and service To drink young or to keep 3-5 years. Temperature of service: 15-16°C.

We suggest all white and poultry as well as roasted or grilled meats to accord with this wine very easily adapted to the simple food (sausages, meats, pâtés, rabbit in mustard sauce, veal escalope with cream, or roulade). This is a very accessible wine and a bottle of nice character.
